I had a box of Fiber One individual brownies that I was taking in my lunches for work, and they were good, so when I ran out, I thought I would try and add some fiber to a box of brownie mix I had on hand. The results? Tasty.
1 box brownie mix that makes a 13x9inch pan
2 Tbsp carnation instant breakfast essentials mix
3 Tbsp whole psyllium husk
6 teaspoons (how many tablespoons is that, 2?) olivio coconut spread
1/2 cup olive oil
1/2 cup water
1/2 cup chocolate chips
Walnuts (or other nuts if you prefer)
Mix everything but the walnuts, and pour in a greased 9x13 inch pan. Sprinkle as many walnuts on top as you want(I only put them on half). Bake at 350 for about 33 minutes or until a wooden toothpick comes out clean.
My notes on the recipe:
- the psyllium really wasn't obvious; I think next time I'd put in 5 or 6 tablespoons (and correspondingly more extra water to keep it moist)
- we also couldn't really taste the coconut oil spread, which I think is just fine. I think it helped keep them pleasantly moist too.
